Pickled Strawberries

One thing about summer is those beautiful red strawberries, sweet and juicy.  I saw some green ones, not ripe yet, and pickled them.  They turned out awesome.  Instead of cucumber pickles with your burgers you should try these out.


  • 2.5 lbs green strawberries, washed  

  • 800 grams white wine vinegar  

  • 800 grams water  

  • 500 grams sugar  

  • 30 grams sea salt


  • wash the strawberries.  pat dry and put in a glass or stainless steel bowl.

  • make the brine.  over medium heat add the water, vinegar, sugar and salt.

  • bring to a simmer.

  • pour brine over the strawberries.  let sit overnight.enjoy.
