Milk Jam

This is a great condiment for various sweet breads.  I enjoy this over pancakes.  Milk Jam is also known as confiture du lait.  It is like home made sweetened condensed milk.  If you take start to caramelize the sauce, it becomes dulce de leche.


  • 1815 grams whole milk

  • 500 grams sugar, granulated

  • 1 gram baking soda


  • Over medium high heat bring milk to a simmer.

  • Add in the sugar and baking soda.  Bring back to a simmer. Stir occasionally.

  • Lower heat to medium and stir frequently.  Reduce mixture until it coats the back of a wooden spoon.

  • If the mixture starts to caramelize, take off the heat and stir to cool it down.  You want the final product to be as white as possible.
